The separator prevents both electrodes from shorting. If the battery cell becomes older or is charged at low temperatures with very high currents, so-called dendrites can form within it. Dendrites are needle-like thorns of lithium that bridge the gap between the electrodes. Without a separator, a short circuit can result, which can cause the cell to overheat. (HS)
